Change From the Heart Recipes & Thanks

THANK YOU!!!!

We want to thank everyone who has donated their time and change over the past year to enriching the lives of the children at Eternal Hope in Nairobi.  You have provided both spiritual and physical blessings.

All of your donations have put some real smiles on the faces of those kids and we were all very lucky to get to be a part of their lives from so far away.

Thank you to Sue for sharing the inspiring videos and photos of the children.  Their testimonies were music to our ears.



Hopefully, we'll have some pictures to detail our March 14th Change From the Heart: A Year of Service activity soon!

To begin with, please enjoy the following recipe for two of the salads that were available that night:


Spinach & Cranberry Salad


1 head spinach (or other leafy green), washed and torn
(for the activity, we combined romaine hearts and spinach)
2 chicken breasts, roasted and cubed
1 Granny Smith apple, diced
1 cup dried cranraisins
1 pkg sliced almonds, toasted
1 cup grated Parmesan cheese
Balsamic Vinaigrette (make your own or use store bought)

Avocado Pasta Salad


 1 lb tri-color rotini (or other desired pasta)
1/2 pint cherry or grape tomatoes, halved or cut in 4ths
2 avocados, peeled and chopped (or as many as you like!)
1 cup sliced black olives
1/2 cup diced green onions
1 T sesame seeds
Italian Dressing
(for the activity, we used Good Seasons Zesty Italian)

Heart 'n Sole Activity Night

For those of you who missed out on our "Heart 'n Sole" activity last night, Sister Elison showed us her amazing Yoga/Pilates skills while teaching us how to do the exercises along the way. I think everyone who participated loved it and really felt the burn! (sorry, no pics) Thanks so much Dorothy!

Also, Dr. Bishop Frandsen touched on the basics of keeping our bodies healthy. Lots of good information! Gotta love his sense of humor ;) Thanks so much Bishop Frandsen!

Following, Sister Lockett informed us about her experiences/myths about breast cancer (with a nice handout). So good to know. She also whipped up some super yummy, healthy smoothies. Thanks so much Rose!

Finally, Sister Gardner kicked off a 5k challenge to all the Sisters for our very own Brownsville Relief Society 5k Fun Run and 1 mile walk which will take place on the Clear Creek Trail on Saturday, April 21st at 9am (plenty of time to train!). There will be registration there (with race bibs) and goodies following the race. If you've never felt like you could do it, have no fear! She included some very doable training plans for all levels. Sister Lewis made up some cute headbands to go along with your training. Thanks Andrea! Just remember, it doesn't matter how fast/slow you go, just as long as you finish! We hope everyone will take on the challenge!

Thanks to everyone else who helped to make this a successful evening. The healthy snacks afterwards were so yummy!

There's a "Couch to 5k" plan for those of you who want to challenge yourselves to run for 30 minutes straight (without stopping) or there's the Jeff Galloway (Olympic marathoner) "Run-Walk-Run" method which is just as beneficial. **On the useful tips sheet you will see the ratio calculator to use for the Galloway method. If you have any questions about anything, feel free to contact Sister Gardner :)

***For those of you who got this sheet last night you will notice your copy didn't have the silhouette of the woman running. The copy machine somehow didn't pick her up. hmmmm.... I guess you're supposed to draw a picture of yourself on there ;)

P.S. We have a running group who meets at the Silverdale Waterfront at 8am every Saturday morning rain or shine. This would be a great opportunity to meet up with friends to get your training in. It always makes things go by quicker when you have a buddy(s).
